BBQ Chicken Summer Rolls are a delicious and refreshing dish perfect for summer gatherings. These rolls are filled with shredded chicken, fresh vegetables, and served with a flavorful dipping sauce.

  • 2 cups cooked chicken, shredded
  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • 1 cup red bell pepper, thinly sliced
  • 1 cup fresh cilantro leaves
  • 1 cup rice vermicelli noodles, cooked according to package instructions
  • 8 rice paper wrappers
  • 1/4 cup hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice
  • 1 teaspoon sriracha (optional)

Instructions

  1. Prepare all your ingredients by shredding the chicken, julienning the cucumber and bell pepper, and cooking the rice vermicelli noodles according to the package instructions. Drain and set aside.
  2. In a small bowl, mix together the hoisin sauce, sesame oil, lime juice, and sriracha (if using) to create a dipping sauce. Set aside.
  3. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, or until it becomes soft and pliable.
  4. Lay the softened rice paper wrapper on a clean surface. In the center, layer a small amount of shredded chicken, carrots, cucumber, bell pepper, cilantro, and a few noodles.
  5. Fold the sides of the rice paper wrapper over the filling, then roll it tightly from the bottom up to form a spring roll. Repeat with the remaining wrappers and filling.
  6. Serve the summer rolls with the dipping sauce on the side.

Notes

  • For a refreshing twist, add sliced avocado or mango to the filling.
  • You can also substitute shrimp or tofu for the chicken for a different protein option.
