2 cups cottage cheese
1 cup rolled oats
1 cup fresh or frozen blueberries
1/2 cup milk
1/4 cup honey or maple syrup
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 tablespoon butter (for greasing)
Instructions
Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish with butter.
In a large mixing bowl, combine the cottage cheese, rolled oats, milk, honey (or maple syrup), eggs, vanilla extract, baking powder, cinnamon, and salt. Mix until well combined.
Gently fold in the blueberries, being careful not to break them.
Pour the mixture into the prepared baking dish and spread it evenly.
Bake in the preheated oven for 30-35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
Allow to cool for about 10 minutes before slicing and serving.
Notes
For added texture, sprinkle some chopped nuts or seeds on top before baking.
Substitute the blueberries with other fruits like raspberries, diced apples, or sliced bananas for different flavor profiles.
