Ingredients
Scale
2 cups strawberries, hulled and sliced
2 cups blueberries
2 cups pineapple chunks (fresh or canned)
2 cups mini marshmallows
1 cup cream cheese, softened
1 cup Greek yogurt
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/4 cup chopped pecans or walnuts (optional)
Instructions
In a large mixing bowl, combine the softened cream cheese, Greek yogurt, powdered sugar, and vanilla extract. Use a hand mixer or whisk to blend until smooth and creamy.
In a separate bowl, gently mix together the strawberries, blueberries, pineapple chunks, and mini marshmallows.
Fold the cream cheese mixture into the fruit mixture until everything is well coated.
If using, stir in the chopped pecans or walnuts for added crunch.
Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
Serve chilled, and enjoy your refreshing cheesecake fruit salad!
Notes
For a lighter version, substitute the cream cheese with a low-fat cream cheese or use a dairy-free yogurt.
Add a splash of lemon juice for a zesty twist, or mix in your favorite fruits like kiwi or mango for variety.
