1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
4 ounces cream cheese, softened
1/2 teaspoon ground cinnamon
1/4 cup granulated sugar (for coating)

Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add the egg and vanilla extract to the butter mixture, mixing until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
In a separate bowl, beat the softened cream cheese with 1/2 teaspoon of cinnamon until smooth.
Scoop a tablespoon of cookie dough and flatten it slightly in your hand. Place about a teaspoon of the cream cheese mixture in the center and fold the dough around it, sealing it completely.
Roll the filled cookie dough ball in a mixture of 1/4 cup granulated sugar and 1 teaspoon cinnamon. Place on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12-15 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a chocolate twist, add 1/4 cup of mini chocolate chips to the dough.
To make the cookies extra festive, drizzle melted chocolate or caramel sauce over the cooled cookies before serving.
