1 pound beef sirloin, thinly sliced
6 cups beef broth
1 onion, halved
1 piece of ginger (about 2 inches), sliced
2 star anise
1 cinnamon stick
3 cloves
1 tablespoon fish sauce
1 tablespoon soy sauce
8 ounces rice noodles
Fresh basil leaves, for garnish
Fresh cilantro, for garnish
Lime wedges, for serving
Sliced jalapeños, for serving
Bean sprouts, for serving
Instructions
In a large pot, combine the beef broth, onion, ginger, star anise, cinnamon stick, and cloves. Bring to a boil over medium-high heat, then reduce to a simmer. Let it simmer for 30 minutes to allow the flavors to meld.
After 30 minutes, remove the onion, ginger, and spices from the broth. Stir in the fish sauce and soy sauce. Keep the broth warm over low heat.
Meanwhile, cook the rice noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
To serve, place a portion of the cooked rice noodles in a bowl. Top with the thinly sliced beef sirloin.
Ladle the hot broth over the noodles and beef, allowing the heat to cook the beef slightly.
Garnish with fresh basil, cilantro, lime wedges, sliced jalapeños, and bean sprouts as desired.
Notes
For a vegetarian version, substitute the beef broth with vegetable broth and use tofu or mushrooms instead of beef.
Add additional toppings like hoisin sauce or sriracha for extra flavor and heat.
