4 cups chicken or vegetable broth
1 medium onion, diced
1 tablespoon olive oil
6 cloves garlic, minced
2 medium potatoes, peeled and diced
2 cups kale or spinach, chopped
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
1 tablespoon lemon juice
Fresh parsley, chopped (for garnish)
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the diced potatoes, broth, thyme, and rosemary to the pot. Bring to a boil, then reduce heat and let simmer for 15-20 minutes, or until the potatoes are tender.
Stir in the chopped kale or spinach and cook for another 5 minutes until wilted.
Season with salt, pepper, and lemon juice. Adjust seasoning to taste.
Serve hot, garnished with fresh parsley.
Notes
For a creamier soup, blend half of the soup in a blender and then return it to the pot before serving.
Add cooked chicken or white beans for extra protein and heartiness.
