A creamy and flavorful one-pot pasta dish featuring garlic and Parmesan cheese, perfect for a quick and satisfying meal.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 4 cups vegetable broth
  • 12 ounces uncooked pasta (penne or fusilli work well)
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  2. Pour in the vegetable broth and bring to a boil.
  3. Add the uncooked pasta to the pot, stirring well to combine. Reduce heat to medium-low and cover. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
  4. Stir in the heavy cream and grated Parmesan cheese until well combined. Season with salt and pepper to taste.
  5. Remove from heat and let it sit for a couple of minutes to thicken.
  6. Serve hot, garnished with fresh parsley.

Notes

  • For added protein, consider mixing in cooked chicken, shrimp, or sautéed vegetables.
  • Swap out the heavy cream for a lighter option by using half-and-half or a dairy-free alternative.
