Start by cooking the fettuccine according to package instructions. Drain and set aside, reserving 1/2 cup of the pasta water.
Season the chicken breasts with salt and pepper on both sides. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and Italian seasoning, cooking for another 2-3 minutes until the tomatoes start to soften.
Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer and let it cook for about 3-4 minutes until slightly thickened.
