  • 2 boneless, skinless chicken breasts (about 1 pound total)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon Italian seasoning
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 ounces fettuccine pasta
  • Fresh basil leaves for garnish

Instructions

  1. Start by cooking the fettuccine according to package instructions. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. Season the chicken breasts with salt and pepper on both sides. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and Italian seasoning, cooking for another 2-3 minutes until the tomatoes start to soften.
  4. Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer and let it cook for about 3-4 minutes until slightly thickened.
  5. Stir in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.
  6. Slice the cooked chicken and return it to the skillet, mixing it with the sauce. Add the cooked fettuccine and toss everything together until well coated.
  7. Serve immediately, garnished with fresh basil leaves.

Notes

  • For a lighter version, substitute half-and-half for heavy cream and use whole wheat pasta.
  • Add spinach or kale to the sauce for extra nutrients and flavor. Simply toss in a couple of handfuls just before serving until wilted.
