A delicious and healthy Paleo Egg Roll Soup that combines ground pork, fresh vegetables, and flavorful seasonings for a comforting meal.

Ingredients

  • 2 tablespoons sesame oil
  • 1 pound ground pork
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 4 cups chicken broth
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 2 tablespoons coconut aminos
  • 1 tablespoon rice vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. In a large pot, heat the sesame oil over medium heat. Add the ground pork and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
  2. Add the diced onion, minced garlic, and minced ginger to the pot. Sauté for another 3-4 minutes until the onion is translucent and fragrant.
  3. Pour in the chicken broth and bring the mixture to a boil.
  4. Once boiling, add the shredded cabbage and carrots. Reduce the heat to a simmer and cook for about 5-7 minutes, until the vegetables are tender.
  5. Stir in the coconut aminos, rice vinegar, salt, and black pepper. Adjust seasoning to taste.
  6. Serve hot, garnished with sliced green onions and sesame seeds.

Notes

  • For a spicier version, add a teaspoon of red pepper flakes or a splash of hot sauce.
  • You can substitute ground pork with ground turkey or chicken for a leaner option.
