A quick and tasty recipe for Scallion Chicken Stir-Fry that combines tender chicken thighs with fresh scallions and a savory sauce.

  • 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 1 bunch scallions, chopped (white and green parts separated)
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the chicken pieces, soy sauce, and cornstarch. Mix well and let marinate for at least 15 minutes.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the white parts of the scallions, garlic, and ginger. Stir-fry for about 1-2 minutes until fragrant.
  4. Return the chicken to the skillet and add the sesame oil, rice vinegar, and sugar. Toss everything together and cook for an additional 2-3 minutes.
  5. Season with salt and pepper to taste and stir in the green parts of the scallions just before serving.

Notes

  • For a spicier dish, add red pepper flakes or sliced fresh chili peppers during the stir-fry.
  • Serve over steamed rice or quinoa for a complete meal.
  • You can also add vegetables like bell peppers or broccoli for added nutrition.
