Slow Cooker Parmesan Garlic Chicken and Potatoes is a delicious and easy-to-make dish that combines tender chicken thighs with flavorful garlic, Parmesan cheese, and baby potatoes, all cooked to perfection in a slow cooker.
Season the chicken thighs with salt, pepper, garlic powder, onion powder, and Italian herbs. Rub the seasoning evenly over the chicken.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs, skin side down, and sear for about 5 minutes until golden brown. Flip and sear the other side for an additional 3 minutes. Remove from heat.
In the slow cooker, place the halved baby potatoes and minced garlic. Pour in the chicken broth and stir to combine.
Place the seared chicken thighs on top of the potatoes in the slow cooker.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
In the last 30 minutes of cooking, sprinkle the grated Parmesan cheese over the chicken and potatoes. Cover and continue cooking until the cheese is melted and bubbly.
Once done, garnish with fresh parsley before serving.
