A flavorful and spicy chicken soup that is easy to make and perfect for a comforting meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (red or green)
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 4 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 pound boneless, skinless chicken breasts
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup black beans, drained and rinsed
  • Salt and pepper to taste
  • Juice of 1 lime
  • Chopped fresh cilantro for garnish
  • Sour cream for serving (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
  2. Stir in the garlic, bell pepper, carrot, and celery. Cook for an additional 5 minutes, stirring occasionally.
  3. Add the oregano, cumin, chili powder, and red pepper flakes. Cook for 1 minute until fragrant.
  4. Pour in the chicken broth and diced tomatoes. Bring the mixture to a boil.
  5. Add the chicken breasts to the pot. Reduce the heat to a simmer and cover. Cook for about 20 minutes, or until the chicken is cooked through.
  6. Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
  7. Stir in the corn and black beans. Simmer for another 5 minutes until heated through.
  8. Season with salt, pepper, and lime juice to taste.
  9. Serve hot, garnished with chopped cilantro and a dollop of sour cream if desired.

Notes

  • For a creamier soup, add 1/2 cup of heavy cream or coconut milk just before serving.
  • Substitute the chicken with cooked shredded turkey for a delicious post-holiday meal option.
