1 pound salmon fillet, skin removed and cut into bite-sized pieces
2 tablespoons olive oil
2 tablespoons sumac
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1 cup feta cheese, crumbled
1/2 cup cream cheese, softened
1 tablespoon lemon juice
1 tablespoon fresh dill, chopped
1 tablespoon fresh parsley, chopped
1 tablespoon fresh chives, chopped
1 tablespoon water (as needed for consistency)
Instructions
Preheat your oven to 400°F. Line a baking sheet with parchment paper.
In a mixing bowl, combine the salmon pieces with olive oil, sumac, garlic powder, salt, and black pepper. Toss until the salmon is evenly coated.
Spread the salmon bites on the prepared baking sheet in a single layer. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
While the salmon is baking, prepare the herb whipped feta. In a food processor, combine the feta cheese, cream cheese, lemon juice, dill, parsley, chives, and a tablespoon of water. Blend until smooth and creamy, adding more water if necessary to reach your desired consistency.
Once the salmon bites are done, remove them from the oven and let them cool for a few minutes. Serve the salmon bites warm with a generous dollop of herb whipped feta on the side.
Notes
For added flavor, try marinating the salmon in the olive oil and sumac for 30 minutes before cooking.
You can also substitute the feta with goat cheese for a different taste profile.
