2 medium sweet potatoes, peeled and diced (about 3 cups)
1 pound ground turkey
1 medium onion, diced
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon salt
½ teaspoon black pepper
1 cup spinach, chopped
½ cup shredded cheddar cheese
2 tablespoons olive oil
Fresh parsley, for garnish (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
Stir in the ground turkey, paprika, cumin, salt, and black pepper. Cook until the turkey is browned and cooked through, about 7-10 minutes.
In a large mixing bowl, combine the diced sweet potatoes and chopped spinach. Add the cooked turkey mixture and stir until well combined.
Transfer the mixture to a greased 9×13-inch baking dish. Spread it evenly and top with shredded cheddar cheese.
Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the sweet potatoes are tender and the cheese is bubbly.
Let it cool for a few minutes before serving. Garnish with fresh parsley if desired.
Notes
For added flavor, try mixing in your favorite herbs, such as thyme or oregano, into the turkey mixture.
Substitute ground turkey with ground chicken or lean beef for a different protein option.
