Taiwanese Beef Rolls are a delicious and flavorful dish made with marinated beef, scallions, and cucumbers wrapped in tortillas or Chinese pancakes.

1 pound thinly sliced beef (flank steak or sirloin)
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon sesame oil
1 teaspoon ground black pepper
1 teaspoon sugar
4 large scallions (green onions), trimmed and cut into 6-inch pieces
1 large cucumber, julienned
8 large flour tortillas or Chinese pancakes
1 tablespoon vegetable oil for cooking
Instructions
In a bowl, combine the soy sauce, oyster sauce, sesame oil, black pepper, and sugar. Add the sliced beef and marinate for at least 30 minutes.
Heat a large skillet over medium-high heat and add the vegetable oil. Once hot, add the marinated beef in a single layer. Cook for about 2-3 minutes on each side until browned and cooked through. Remove from heat.
Lay a tortilla or pancake flat on a clean surface. Place a few pieces of cooked beef, a couple of scallion pieces, and some julienned cucumber on one end of the tortilla. Roll it tightly, starting from the filled end.
Repeat with the remaining tortillas and filling.
Slice each roll into bite-sized pieces and serve warm.
Notes
For a spicier kick, add sliced jalapeños or a drizzle of sriracha inside the rolls.
You can substitute the beef with thinly sliced chicken or tofu for a different protein option.
