8 ounces feta cheese, crumbled
4 ounces cream cheese, softened
1 tablespoon olive oil
1 teaspoon lemon juice
1 teaspoon honey
1 cup strawberries, hulled and halved
1 tablespoon balsamic vinegar
1 teaspoon fresh thyme leaves (optional)
Salt and pepper to taste
Crackers or toasted bread for serving
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, toss the halved strawberries with balsamic vinegar, a pinch of salt, and a dash of pepper. Spread them out on the prepared baking sheet.
Roast the strawberries in the oven for about 15-20 minutes, or until they are soft and caramelized. Remove from the oven and let cool slightly.
In a food processor, combine the crumbled feta cheese, cream cheese, olive oil, lemon juice, honey, and a pinch of salt and pepper. Blend until smooth and creamy.
Transfer the whipped feta to a serving dish and top with the roasted strawberries. If desired, sprinkle fresh thyme leaves over the top for added flavor.
Serve with crackers or toasted bread for dipping.
Notes
For a spicy kick, add a pinch of red pepper flakes to the whipped feta mixture.
