Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup almond flour
  • 1/4 cup granulated sugar
  • 1 teaspoon instant yeast
  • 1/2 teaspoon salt
  • 1/2 cup whole milk warmed
  • 1/4 cup unsalted butter melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup almond paste
  • 1/4 cup sliced almonds
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup powdered sugar for icing
  • 1 tablespoon milk for icing

Method

  1. In a large mixing bowl, combine the all-purpose flour, almond flour, granulated sugar, instant yeast, and salt. Mix well.
  2. In a separate bowl, whisk together the warmed milk, melted butter, egg, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Preheat your oven to 350°F.
  6. Roll out the dough on a floured surface into a rectangle about 1/4 inch thick.
  7. Spread the almond paste evenly over the dough, then sprinkle with sliced almonds and ground cinnamon.
  8. Starting from one long edge, roll the dough tightly into a log. Slice the log into 12 equal pieces.
  9. Place the rolls in a greased baking dish and let them rise for another 30 minutes.
  10. Bake in the preheated oven for 25-30 minutes or until golden brown.
  11. While the rolls are baking, mix the powdered sugar and milk in a small bowl to create the icing.
  12. Once the rolls are done, drizzle the icing over the warm rolls before serving.

Notes

  • For a nut-free version, substitute almond flour with additional all-purpose flour and omit the almond paste.
  • To add a fruity twist, consider mixing in some dried cherries or cranberries with the almond paste before spreading it on the dough.
