- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
- Gently pat the cod fillets dry with paper towels. Whisk together olive oil, salt, black pepper, garlic powder, and paprika in a small bowl. Brush this mixture over both sides of the fillets.
- Place the seasoned cod fillets on the lined baking sheet, ensuring enough space between them for even cooking.
- Bake the cod for 12–15 minutes or until they flake easily with a fork and reach an internal temperature of 145°F (63°C).
- Combine Greek yogurt, mayonnaise (if using), fresh dill, lemon juice, lemon zest, and Dijon mustard in a mixing bowl. Whisk until smooth, seasoning with salt and pepper to taste.
- Remove the Baked Cod from the oven and transfer it to serving plates. Drizzle the lemon-dill sauce over each fillet and garnish with fresh dill sprigs and lemon slices.
