  • 8 ounces feta cheese crumbled
  • 4 large eggs
  • 1 cup cherry tomatoes halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine the crumbled feta cheese and halved cherry tomatoes. Drizzle with olive oil and sprinkle with dried oregano, salt, and pepper.
  3. Create four small wells in the mixture and crack one egg into each well.
  4. Bake in the preheated oven for 20-25 minutes, or until the egg whites are set but the yolks are still slightly runny.
  5. Remove from the oven and let it cool for a minute. Garnish with fresh basil leaves if desired.
  6. Serve warm, scooping the mixture onto toast or enjoying it straight from the dish.
