Method
 

Marination and Baking
  1. In a large mixing bowl, combine plain yogurt, vegetable oil, lemon juice, ginger, garlic, and all the spices. Whisk until smooth.
  2. Make deep cuts in chicken pieces and coat with the marinade. Cover and refrigerate for 12 to 24 hours.
  3. Preheat the oven to 200°C (400°F). Prepare a wire rack lined with a foil-covered tray.
  4. Place marinated chicken on the rack and bake for 30 minutes. Flip and bake another 10-15 minutes until internal temperature reaches 75°C (165°F).
  5. Remove from the oven, let rest for a few minutes, then serve with yogurt raita or cucumber salad.
