Marination and Baking
- In a large mixing bowl, combine plain yogurt, vegetable oil, lemon juice, ginger, garlic, and all the spices. Whisk until smooth.
- Make deep cuts in chicken pieces and coat with the marinade. Cover and refrigerate for 12 to 24 hours.
- Preheat the oven to 200°C (400°F). Prepare a wire rack lined with a foil-covered tray.
- Place marinated chicken on the rack and bake for 30 minutes. Flip and bake another 10-15 minutes until internal temperature reaches 75°C (165°F).
- Remove from the oven, let rest for a few minutes, then serve with yogurt raita or cucumber salad.
