Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red bell pepper diced
  • 1 cup romaine lettuce chopped
  • 1/2 cup red onion thinly sliced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro chopped
  • 1/2 cup BBQ sauce
  • 1/4 cup ranch dressing
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the cooked chicken, corn, cherry tomatoes, cucumber, red bell pepper, romaine lettuce, red onion, and cilantro.
  2. Drizzle the BBQ sauce over the salad and toss gently to combine.
  3. Add the ranch dressing and toss again until everything is well coated.
  4. Season with salt and pepper to taste.
  5. Sprinkle the shredded cheddar cheese on top before serving.
