  • 1 pound Ground Beef or ground turkey/chicken
  • 1 cup Onion (chopped) or shallots/leeks
  • 2 cloves Garlic (minced) or garlic powder
  • 2 medium Carrots (diced) or parsnips
  • 2 stalks Celery (diced) can be omitted
  • 1 teaspoon Dried Basil or oregano
  • 1 teaspoon Dried Oregano or thyme
  • to taste Salt & Black Pepper
Broth
  • 1 can Diced Tomatoes (canned, with juice) or fresh tomatoes
  • 1 cup Tomato Sauce or crushed tomatoes
  • 4 cups Beef Broth or vegetable broth
Pasta
  • 2 cups Elbow Macaroni (uncooked) or small shells/ditalini
  • 1 cup Frozen Peas or Corn (optional) or other frozen veggies
Garnishing
  • to taste Fresh Parsley (for garnish, optional) or mint/cilantro

Method
 

Cooking Steps
  1. Heat the oil in a large pot over medium heat for about 1-2 minutes until shimmering.
  2. Brown the ground beef for 5-7 minutes until no longer pink; drain excess fat.
  3. Sauté the onion, garlic, carrots, and celery for 5 minutes until soft and translucent.
  4. Add basil, oregano, salt, and pepper; stir and let spices bloom for 1-2 minutes.
  5. Pour in diced tomatoes, tomato sauce, and beef broth; bring to a boil.
  6. Reduce heat and simmer for 10-15 minutes to meld flavors.
  7. Stir in macaroni and cook uncovered for about 10 minutes until tender but al dente.
  8. Add frozen peas or corn in the last 2-3 minutes of cooking.
  9. Taste for seasoning and garnish with parsley before serving.
