Ingredients

Ice Cream Base
  • 1 cup Whole Milk Provides essential creaminess for a smooth texture; consider using low-fat milk for a lighter version.
  • 1.5 cups Heavy Whipping Cream Adds richness and contributes to a velvety mouthfeel.
  • 0.5 cups Sugar Balances flavors and enhances sweetness; swap with a sugar substitute for a low-calorie alternative.
  • 3 teaspoons Vanilla Pudding Mix (powder) Thickens the mixture for a delightful creamy consistency.
  • 1 teaspoon Vanilla Extract Infuses warmth and depth; for superior flavor, opt for pure vanilla.
Flavor
  • 1 teaspoon Raspberry Extract or Raspberries Adds fruity notes that brighten the flavor profile.
  • 1 teaspoon Lemon Extract Provides a zesty kick; fresh lemon zest can enhance the citrus flavor beautifully.
  • 0.25 teaspoon Salt Balances and enhances the overall flavor of the ice cream.
Color
  • 0.5 teaspoon Blue Food Coloring Gives the ice cream its signature blue hue; mix in until your desired vibrancy is achieved.

Preparation Steps
  1. In a medium saucepan, heat 1 cup of whole milk over medium heat until you see small bubbles forming around the edges, about 5 minutes.
  2. Once the milk is bubbling, whisk in ½ cup of sugar and ¼ teaspoon of salt until fully dissolved, which should take about 2 minutes.
  3. Remove the saucepan from heat and add 1½ cups of heavy whipping cream, 1 teaspoon of vanilla extract, 3 teaspoons of vanilla pudding mix, 1 teaspoon of raspberry extract, and 1 teaspoon of lemon extract. Stir the mixture until completely blended.
  4. Mix in ½ teaspoon of blue food coloring, stirring until the desired shade of vibrant blue is achieved.
  5. Transfer the mixture to a bowl and cover with plastic wrap. Refrigerate for at least 2 hours or until completely chilled.
  6. After chilling, pour the cold mixture into your ice cream maker and churn according to the manufacturer's instructions.
  7. Once churned, scoop your Blue Moon Ice Cream into bowls or waffle cones.
