Ingredients
  

  • 1 cup fresh blueberries
  • 1/4 cup fresh basil leaves plus extra for garnish
  • 1/2 cup freshly squeezed lemon juice about 4 lemons
  • 1/2 cup honey or agave syrup adjust to taste
  • 4 cups sparkling water or club soda
  • Ice cubes
  • Lemon slices for garnish

Method
 

  1. In a blender, combine the fresh blueberries and basil leaves. Blend until smooth.
  2. Strain the mixture through a fine mesh sieve into a large pitcher to remove the solids. Use a spoon to press down on the mixture to extract as much juice as possible.
  3. Add the freshly squeezed lemon juice and honey or agave syrup to the blueberry-basil juice. Stir well until the sweetener is fully dissolved.
  4. Slowly pour in the sparkling water or club soda, stirring gently to combine.
  5. Fill glasses with ice cubes and pour the mocktail over the ice. Garnish with lemon slices and additional basil leaves.
  6. Serve immediately and enjoy!
