- In a medium saucepan, combine fresh blueberries, honey (or maple syrup), and a splash of lemon juice. Heat over medium-high heat until the mixture begins to bubble. Lower the heat and let it simmer for about 10 minutes, stirring occasionally, until the blueberries burst and thicken into a delightful compote. Remove from heat and allow it to cool while you prepare the yogurt base.
- In a large mixing bowl, scoop in the Greek yogurt and add your preferred sweetener, mixing everything together until it's smooth and uniformly blended. You can taste and adjust the sweetness if necessary.
- Take an ice cube tray or silicone molds, and spoon the luscious yogurt into each compartment, filling them about ¾ of the way full. Next, take your cooled blueberry compote and add a small dollop to the top of each yogurt-filled mold. Using a toothpick or skewer, gently swirl the compote into the yogurt for a marbled effect.
- Carefully place the filled tray or molds in the freezer and allow them to chill for a minimum of 2 hours, or until they're completely solid.
- Once frozen solid, remove the Blueberry Swirl Yogurt Bites from the molds. Let them sit at room temperature for about 2-3 minutes to soften slightly before serving.
