  • 8 ounces Rotini Pasta Consider using gluten-free or whole wheat for a healthier twist.
  • 1 can Canned Black Beans Rinse and drain before using.
  • 1 can Canned Corn Drain well before use.
  • 1 cup Cherry Tomatoes Halved for best flavor distribution.
  • 1 medium Bell Pepper Diced into small, bite-sized pieces.
  • 1 medium Red Onion Finely chopped for flavor.
  • 1 medium Avocado Dice just before adding for freshness.
  • 1/4 cup Fresh Cilantro Chopped finely for even mixing.
For the Dressing
  • 1 teaspoon Garlic Powder Or substitute with minced fresh garlic.
  • 1 teaspoon Cumin Optional for earthiness.
  • 1 teaspoon Chili Powder Adjust based on spice preference.
  • 2 tablespoons Lime Juice Fresh lime is best.
  • 3 tablespoons Olive Oil Use quality extra virgin for flavor.

Method
 

Cooking Instructions
  1. Boil a large pot of salted water. Add rotini pasta and cook for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, chop bell pepper, red onion, avocado, and halve cherry tomatoes. Rinse and drain black beans and corn.
  3. In a small bowl, whisk together lime juice, olive oil, garlic powder, cumin, chili powder, salt, and pepper.
  4. In a large mixing bowl, combine cooled pasta, black beans, corn, cherry tomatoes, bell pepper, red onion, avocado, and cilantro. Drizzle dressing over and toss gently.
  5. Cover and chill in the refrigerator for at least 30 minutes to allow flavors to meld.
  6. When ready to serve, gently toss salad and adjust seasoning with extra salt, pepper, or lime juice. Garnish with cilantro.
