Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin with non-stick spray or butter.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  3. In a separate bowl, whisk together the milk, eggs, melted unsalted butter, and vanilla extract.
  4. Gently pour the wet mixture into the bowl of dry ingredients, stirring until just combined. If including any mix-ins, fold them in now.
  5. Fill each cavity of the prepared muffin tin about 3/4 full with batter.
  6. Place the filled muffin tin in the preheated oven and bake for 12–15 minutes, checking for a golden brown hue.
  7. Once baked, remove the muffin tin from the oven and allow the Pancake Poppers to cool for about 5 minutes.
  8. Serve warm with a drizzle of maple syrup or your desired toppings.
