- Preheat your oven to 375°F (190°C) and grease a mini muffin tin with non-stick spray or butter.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- In a separate bowl, whisk together the milk, eggs, melted unsalted butter, and vanilla extract.
- Gently pour the wet mixture into the bowl of dry ingredients, stirring until just combined. If including any mix-ins, fold them in now.
- Fill each cavity of the prepared muffin tin about 3/4 full with batter.
- Place the filled muffin tin in the preheated oven and bake for 12–15 minutes, checking for a golden brown hue.
- Once baked, remove the muffin tin from the oven and allow the Pancake Poppers to cool for about 5 minutes.
- Serve warm with a drizzle of maple syrup or your desired toppings.
