Method
 

Instructions
  1. In a small bowl or glass jar, combine olive oil, red wine vinegar, lemon juice, honey, garlic powder, salt, and pepper. Whisk or shake vigorously for about 30 seconds until well blended and emulsified.
  2. In a large mixing bowl, slice the peaches and halve the cherry tomatoes. Finely chop the shallot.
  3. To the bowl, crumble the feta cheese, and toss in the fresh basil leaves and mint.
  4. Pour the prepared dressing over the salad and gently toss to coat all ingredients evenly.
  5. Serve immediately or refrigerate for about 30 minutes to allow flavors to meld.
