Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 pound)
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes diced
  • 1/4 cup fresh basil chopped
  • 1/4 cup mozzarella cheese shredded
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon balsamic glaze optional, for drizzling

Method
 

  1. Preheat the oven to 400°F.
  2. Season the chicken breasts with olive oil, salt, and pepper. Place them in a baking dish.
  3. In a mixing bowl, combine the diced cherry tomatoes, chopped basil, balsamic vinegar, and a pinch of salt and pepper. Stir to combine.
  4. Spoon the tomato mixture evenly over the chicken breasts.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  6. Remove the chicken from the oven and sprinkle the shredded mozzarella cheese on top. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  7. Drizzle with balsamic glaze if desired before serving.
