- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- Mash three ripe bananas in a large mixing bowl, then mix in the grated carrots, sugar, brown sugar, eggs, vegetable oil, and vanilla extract.
- In another bowl, combine the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually fold the dry ingredients into the wet mixture until just combined, leaving lumps for a fluffy texture.
- If using, fold in the walnuts at this stage.
- Pour the batter into the greased pan and bake for 55 to 65 minutes, until a toothpick comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring to a wire rack.
