Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much liquid as possible.
In the same bowl, add the mozzarella cheese, Parmesan cheese, egg, garlic powder, oregano, black pepper, and almond flour. Mix until well combined.
Spread the zucchini mixture onto the prepared baking sheet, shaping it into a rectangle about 1/2 inch thick.
Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
Remove from the oven and let it cool for a few minutes. Cut into sticks and serve warm.
