- Boil salted water in a large pot and cook the pasta according to package instructions until al dente.
- Reserve ½ to 1 cup of pasta water before draining the pasta.
- Heat olive oil in a large skillet over medium heat for about 2 minutes.
- Add minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in lemon zest and cook for 1 minute, then add lemon juice.
- Incorporate shrimp and a pinch of salt, cooking for about 4 minutes until pink and opaque.
- Add spinach and cook for 2-3 minutes until wilted.
- Toss in drained pasta, adding reserved pasta water until desired sauce consistency is reached.
- Taste and adjust seasoning with more salt and a drizzle of olive oil if desired.
- Serve garnished with chopped chives, parsley, or sprinkle with cheese.
