Ingredients
  

Pasta
  • 8 ounces pasta of choice spaghetti or linguine recommended
  • 4 quarts water for boiling, add salt
Sauté
  • 1/4 cup olive oil or vegetable oil if preferred
  • 3 cloves garlic minced
  • 1 tablespoon lemon zest lime zest can be used
  • 2 tablespoons lemon juice or vinegar if out of lemons
Protein
  • 1 pound shrimp or protein of choice
Vegetables
  • 4 cups spinach or choice of veggies like kale, broccoli, or bell peppers
Seasoning & Garnishes
  • to taste salt adjust according to dietary needs
  • optional cheese nutritional yeast for dairy-free

  • Colander

Method
 

Cooking Instructions
  1. Boil salted water in a large pot and cook the pasta according to package instructions until al dente.
  2. Reserve ½ to 1 cup of pasta water before draining the pasta.
  3. Heat olive oil in a large skillet over medium heat for about 2 minutes.
  4. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Stir in lemon zest and cook for 1 minute, then add lemon juice.
  6. Incorporate shrimp and a pinch of salt, cooking for about 4 minutes until pink and opaque.
  7. Add spinach and cook for 2-3 minutes until wilted.
  8. Toss in drained pasta, adding reserved pasta water until desired sauce consistency is reached.
  9. Taste and adjust seasoning with more salt and a drizzle of olive oil if desired.
  10. Serve garnished with chopped chives, parsley, or sprinkle with cheese.
