Method
 

Directions
  1. Activate Yeast: Combine warm water, yeast, and a pinch of sugar. Let sit for 5 to 10 minutes until frothy.
  2. Mix Dough: In a large bowl, combine flour, sugar, salt. Pour in the activated yeast mixture and mix until shaggy.
  3. Knead Dough: Knead on floured surface for 8 to 10 minutes until smooth. Alternatively, use a stand mixer for 5 minutes.
  4. First Rise: Lightly oil a bowl, place dough inside, cover, and let rise for about 1 hour or until doubled.
  5. Shape Pretzels: Punch down dough, divide into 8 pieces, roll into ropes, and twist into pretzel shapes.
  6. Baking Soda Bath: Boil water, stir in baking soda. Place pretzels in water for 30 seconds, turning halfway.
  7. Prepare for Baking: Transfer pretzels to a parchment-lined baking sheet; optionally sprinkle with sea salt.
  8. Bake: Preheat oven to 400°F. Bake pretzels for 12 to 15 minutes until golden brown.
  9. Coat with Topping: Brush with melted butter, then sprinkle cinnamon sugar mixture while still warm.
