Ingredients
  

For the Ribs
  • 1 rack baby back pork ribs Choose high-quality, well-marbled ribs.
For the Rub
  • 1/2 cup brown sugar Can substitute with light brown sugar.
  • 1 tablespoon smoked paprika Replace with regular paprika for less smoke.
  • 1 teaspoon garlic powder Fresh garlic can be used instead.
  • 1 teaspoon onion powder Shallots or fresh onions can be alternatives.
  • 1 teaspoon black pepper Freshly ground is preferred.
  • 1 teaspoon salt Consider low-sodium alternatives.
  • 1/2 teaspoon cayenne pepper Omit for milder ribs.
For the Glaze
  • 1 cup ketchup Use no-salt-added varieties.
  • 1/4 cup apple cider vinegar Can replace with white vinegar.
  • 1/4 cup molasses Honey or maple syrup can be substitutes.
  • 1 tablespoon Worcestershire sauce Balsamic vinegar can be a sweeter substitute.
  • 1 teaspoon liquid smoke Can be omitted if using a smoker.

Method
 

Prep Ribs
  1. Remove the silver skin from the back of the baby back pork ribs with a blunt knife.
  2. Pat the ribs dry with paper towels.
Make Rub
  1. Combine brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper in a bowl.
  2. Massage the spice mixture into the ribs and let them sit at room temperature for about 30 minutes.
Cook Ribs (Phase 1)
  1. Preheat your smoker or oven to 225°F (107°C).
  2. Place the seasoned ribs bone side down and cook for approximately 3 hours.
Wrap Ribs (Phase 2)
  1. Transfer the ribs onto heavy-duty aluminum foil and splash with apple cider vinegar.
  2. Wrap the foil tightly to create a sealed packet and cook for an additional 2-3 hours.
Make Glaze
  1. Whisk together ketchup, apple cider vinegar, molasses, Worcestershire sauce, and liquid smoke in a bowl.
Glaze and Finish
  1. Remove ribs from foil, brush with glaze, and cook for 5-10 minutes until bubbling.
Rest and Serve
  1. Let the ribs rest for about 15 minutes before slicing and serving warm.
