  • 3 cups Cooked Rice White or brown, adjust time for brown rice.
  • 2 cups Bell Peppers Mix of red, green, and yellow.
  • 1 medium Onion Diced.
  • 2 cloves Garlic Minced.
  • 1 can (15 oz) Diced Tomatoes
  • 1 can (8 oz) Tomato Sauce Can use crushed tomatoes for a chunkier texture.
  • 1 tbsp Italian Seasoning
  • to taste Salt
  • to taste Black Pepper
For the Topping
  • 2 cups Mozzarella Cheese Shredded.
  • 1 cup Cheddar Cheese Shredded.
For Cooking
  • 2 tbsp Olive Oil For sautéing.
For Garnish (Optional)
  • 1/4 cup Fresh Parsley Chopped.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and sauté diced onion and minced garlic until translucent, about 3-4 minutes.
  3. Add ground beef and cook for 5-7 minutes until browned. Drain excess fat.
  4. Stir in diced bell peppers and cook for another 3-4 minutes until slightly softened.
  5. Add cooked rice, diced tomatoes, and tomato sauce. Stir in Italian seasoning, salt, and black pepper. Mix until combined.
  6. Let the mixture simmer for about 10 minutes on low heat.
  7. Remove from heat and fold in 1 cup of mozzarella cheese until melted.
  8. Transfer the mixture to a greased 9x13 baking dish.
  9. Sprinkle the remaining mozzarella and cheddar cheese over the top.
  10. Cover with foil and bake for 20 minutes.
  11. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  12. Let it rest for 5 minutes before serving. Garnish with chopped parsley if desired.
