- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil and sauté diced onion and minced garlic until translucent, about 3-4 minutes.
- Add ground beef and cook for 5-7 minutes until browned. Drain excess fat.
- Stir in diced bell peppers and cook for another 3-4 minutes until slightly softened.
- Add cooked rice, diced tomatoes, and tomato sauce. Stir in Italian seasoning, salt, and black pepper. Mix until combined.

- Remove from heat and fold in 1 cup of mozzarella cheese until melted.

- Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
