Preparation Steps
- Preheat the Oven to 400°F (204°C) and prepare a baking sheet with aluminum foil.
- Wash the sweet potatoes thoroughly, pat dry, and place on the baking sheet.
- Bake the sweet potatoes for 45 to 60 minutes until fork-tender.
- Allow the baked sweet potatoes to cool for about 10 minutes before peeling.
- Mash the sweet potatoes in a bowl and mix in almond milk, maple syrup, almond butter, and flaxseed.
- Use an electric mixer to beat the mixture until light and fluffy, about 2-3 minutes.
- If chilled, reheat the mixture on low heat for about 5 minutes.
- Serve the warm sweet potato mash in bowls and add desired toppings.
