Method
 

Preparation Steps
  1. Preheat the Oven to 400°F (204°C) and prepare a baking sheet with aluminum foil.
  2. Wash the sweet potatoes thoroughly, pat dry, and place on the baking sheet.
  3. Bake the sweet potatoes for 45 to 60 minutes until fork-tender.
  4. Allow the baked sweet potatoes to cool for about 10 minutes before peeling.
  5. Mash the sweet potatoes in a bowl and mix in almond milk, maple syrup, almond butter, and flaxseed.
  6. Use an electric mixer to beat the mixture until light and fluffy, about 2-3 minutes.
  7. If chilled, reheat the mixture on low heat for about 5 minutes.
  8. Serve the warm sweet potato mash in bowls and add desired toppings.
