  • 1 packet Ranch Seasoning Mix Homemade ranch seasoning can be used as a substitute.
  • 1 tsp Garlic Powder Fresh garlic can be used if preferred.
  • 1/2 tsp Black Pepper
For the Pasta and Sauce
  • 8 oz Rotini Pasta Use any pasta shape of choice if rotini isn't available.
  • 1 cup Milk Any milk variety works, but whole milk offers the richest flavor.
  • 1 cup Sour Cream Greek yogurt could be a healthier alternative for sour cream.
  • 2 cups Shredded Cheddar Cheese Monterey Jack or Pepper Jack can be used for added flavor.
For the Topping
  • 1 cup Sweet Corn Both canned or frozen corn can be used interchangeably.
  • 1 cup Crushed Ritz Crackers or Panko Breadcrumbs Any breadcrumbs can be used if Ritz aren't available.
  • 1 cup Additional Cheddar Cheese

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add your ground beef and cook until browned, about 5-7 minutes. Drain excess grease.
  3. Stir in the sweet corn, ranch seasoning mix, garlic powder, and a pinch of black pepper. Sauté for about 2 minutes.
  4. Add milk, sour cream, and 1 cup of shredded cheddar cheese. Stir until smooth and creamy, about 2-3 minutes.
  5. Combine cooked rotini pasta with the beef mixture in a large mixing bowl. Transfer to a greased 9x13-inch baking dish.
  6. Sprinkle remaining cheddar cheese and crushed Ritz crackers or panko breadcrumbs over the top.
  7. Bake in the preheated oven for 20-25 minutes until cheese is bubbly and top is golden brown.
  8. Allow to cool for about 5 minutes before serving.
