- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add your ground beef and cook until browned, about 5-7 minutes. Drain excess grease.
- Stir in the sweet corn, ranch seasoning mix, garlic powder, and a pinch of black pepper. Sauté for about 2 minutes.
- Add milk, sour cream, and 1 cup of shredded cheddar cheese. Stir until smooth and creamy, about 2-3 minutes.
- Combine cooked rotini pasta with the beef mixture in a large mixing bowl. Transfer to a greased 9x13-inch baking dish.
- Sprinkle remaining cheddar cheese and crushed Ritz crackers or panko breadcrumbs over the top.
- Bake in the preheated oven for 20-25 minutes until cheese is bubbly and top is golden brown.
