For the Topping
  • 1 cup Shredded Cheddar Cheese Can swap with Monterey Jack or mozzarella

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Brown 1 pound of ground beef in a large skillet over medium-high heat, about 5–7 minutes. Drain excess fat.
  3. Add 1 diced onion and 8 ounces of sliced mushrooms. Sauté for 5–7 minutes until the onion is translucent.
  4. Stir in 2 minced garlic cloves and cook for an additional minute until fragrant.
  5. Incorporate 1 cup of uncooked long-grain white rice, 2 cups of beef broth, and 1 cup of cream of mushroom soup. Simmer for 2–3 minutes.
  6. Remove from heat and stir in 1/2 cup of sour cream until creamy and well blended.
  7. Transfer the mixture into the greased baking dish and spread evenly.
  8. Sprinkle 1 cup of shredded cheddar cheese on top.
  9. Cover with aluminum foil and bake for 30 minutes.
  10. Remove foil and bake uncovered for an additional 15–20 minutes until cheese is bubbly and golden brown.
  11. Let the dish rest for 5–10 minutes before serving.
