- Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- Brown 1 pound of ground beef in a large skillet over medium-high heat, about 5–7 minutes. Drain excess fat.
- Add 1 diced onion and 8 ounces of sliced mushrooms. Sauté for 5–7 minutes until the onion is translucent.
- Stir in 2 minced garlic cloves and cook for an additional minute until fragrant.
- Incorporate 1 cup of uncooked long-grain white rice, 2 cups of beef broth, and 1 cup of cream of mushroom soup. Simmer for 2–3 minutes.
- Remove from heat and stir in 1/2 cup of sour cream until creamy and well blended.
- Transfer the mixture into the greased baking dish and spread evenly.
- Sprinkle 1 cup of shredded cheddar cheese on top.
