Step-by-Step Instructions
- Begin by placing a skillet or griddle over medium heat, allowing it to warm for 2-3 minutes. Add 1 tablespoon of unsalted butter to the pan and watch for it to melt and foam gently.
- Once the butter has melted, spread it evenly across the bottom of the pan. Place your slice of bread in the pan and generously spread spinach pesto on top.
- Break the burrata cheese into smaller pieces and distribute it evenly over the pesto-smeared bread.
- Top with another slice of bread and cook undisturbed for about 3-4 minutes until the bottom bread turns golden brown.
- Flip the sandwich carefully using a spatula and cook for another 3-4 minutes until the second side is golden and the cheese is melting.
- Remove from the pan, let it rest for a minute, then slice in half and serve it warm.

Notes
Let the burrata sit at room temperature for 15-20 minutes before cooking for optimal melting. Pair with tomato soup or arugula salad for a complete meal.
