Cooking Steps
- Heat 2 tablespoons of olive oil in a large skillet over medium heat for 1-2 minutes until shimmering.
- Add 8 ounces of sliced chicken sausage and cook until browned, about 5-7 minutes, then remove and set aside.
- In the same skillet, add 1 diced onion and sauté for 3-4 minutes until translucent.
- Stir in 3 minced garlic cloves and cook for 1 minute until fragrant.
- Add 1 cup of orzo pasta, stirring frequently for 1-2 minutes to lightly toast.
- Pour in 4 cups of chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes.
- Stir in ½ cup of heavy cream, 2 cups of fresh spinach, and 1 tablespoon of Italian seasoning for 2-3 minutes until creamy.
- Return the browned chicken sausage to the skillet and heat through for 1 minute.
- Stir in ½ cup of grated Parmesan cheese and garnish with freshly chopped parsley.
