  • 1 cup Chipotle Sauce store-bought or homemade
  • 1 cup Milk dairy or non-dairy like almond or coconut milk
For the Shrimp
  • 1 pound Shrimp jumbo shrimp preferred
For the Veggies
  • 1 medium Red Bell Pepper any bell pepper variation works
  • 2 cloves Garlic minced
  • 3 stalks Green Onions use only the white parts in cooking
Seasoning

  • to taste Pepper essential for enhancing flavors
For Garnish
  • 1/4 cup Fresh Cilantro finely chopped
  • 1 medium Jalapeño sliced for an extra kick

Method
 

Cooking Steps
  1. Heat 2 tablespoons of olive oil in a large sauté pan over medium heat. Once the oil is shimmering, add the shrimp in a single layer, cooking them for about 3-4 minutes. Remove the shrimp and set aside.
  2. In the same pan, add 1 tablespoon of olive oil and bring to medium heat. Toss in the diced red bell pepper, sautéing for 4-5 minutes until tender.
  3. Stir in minced garlic and the white parts of green onions, cooking for an additional 2 minutes. Season with salt and pepper.
  4. Pour in the chipotle sauce and milk, stirring to create a creamy mixture. Simmer for 2-3 minutes.
  5. Return the shrimp to the pan, stirring gently to coat with the sauce. Heat them through for about 2 minutes.
  6. Remove from heat and garnish with green onions, cilantro, and jalapeño. Serve warm.
