Pat the chicken breasts dry with paper towels. Dip each chicken breast into the beaten eggs, allowing any excess to drip off, then coat with the Parmesan-breadcrumb mixture, pressing gently to adhere.
Spray the air fryer basket with cooking spray. Place the coated chicken breasts in a single layer in the basket, making sure they are not touching.
Cook in the air fryer for 10-12 minutes, flipping halfway through, until the chicken is golden brown and reaches an internal temperature of 165°F.
Remove the chicken from the air fryer and let it rest for a few minutes before slicing.
