Step-by-Step Instructions
- Begin by patting the bone-in, skin-on chicken thighs dry with paper towels to absorb excess moisture. Let them rest for about 20 minutes at room temperature.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil. Place each seasoned chicken thigh on the baking sheet, spacing them at least an inch apart.
- Once your oven reaches the right temperature, slide the baking sheet with the chicken thighs onto the middle rack. Bake for 35-40 minutes, until the skin turns golden brown and becomes crispy.
- Check the internal temperature of the thickest part of the thigh with a meat thermometer; ideal doneness is between 175°F and 180°F (80°C to 82°C).
- For extra crispiness, turn on the broiler for an additional 2-3 minutes after baking. Keep a close watch to prevent burning.
- Once broiling is complete, remove the chicken thighs from the oven and let them rest for about 5 minutes before serving.
