  1. Begin by patting the bone-in, skin-on chicken thighs dry with paper towels to absorb excess moisture. Let them rest for about 20 minutes at room temperature.
  2. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil. Place each seasoned chicken thigh on the baking sheet, spacing them at least an inch apart.
  3. Once your oven reaches the right temperature, slide the baking sheet with the chicken thighs onto the middle rack. Bake for 35-40 minutes, until the skin turns golden brown and becomes crispy.
  4. Check the internal temperature of the thickest part of the thigh with a meat thermometer; ideal doneness is between 175°F and 180°F (80°C to 82°C).
