For the Coating
  • 1 cup grated Parmesan cheese use pecorino for a sharper taste
  • 1 cup panko breadcrumbs regular breadcrumbs won't be as crispy
For the Assembly
  • 1 cup mozzarella cheese fresh mozzarella offers a more authentic taste
  • 1 cup marinara sauce opt for low-sodium if concerned about salt intake
  • 4 pieces French rolls ciabatta or hoagie rolls can be tasty alternatives

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine panko breadcrumbs, grated Parmesan cheese, paprika, salt, pepper, garlic powder, and dried basil. Mix thoroughly.
  3. Coat the chicken thoroughly in the breadcrumb mixture.
  4. Arrange the coated chicken on a baking sheet and bake for 15 minutes. Flip and bake for another 15 minutes until crispy.
  5. Slice French rolls and place mozzarella on each half. Lower oven to 400°F (200°C) and bake rolls for 5 to 7 minutes.
  6. Spread marinara sauce on the bottom half of each roll, top with chicken, and place the top half of the roll on.
