- Start by cleaning and deveining the shrimp, then pat them dry with paper towels.
- Arrange three shallow bowls: one for beaten eggs, one for coconut-flake and breadcrumb mixture, and one for breadcrumbs alone.
- Dunk each shrimp into the beaten eggs, then transfer to the coconut-breadcrumb mixture, pressing to coat evenly.
- Heat about half an inch of vegetable or canola oil in a large skillet over medium heat.
- Fry the coated shrimp in batches for 2-3 minutes on each side until golden brown.
