Step-by-Step Instructions
  1. Begin by washing and chopping the fresh peaches into small, bite-sized pieces. Gather all your ingredients including flour, sugar, baking powder, egg, milk, and vanilla extract.
  2. In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and a pinch of salt. In a separate bowl, whisk together the egg, milk, and vanilla extract until well combined. Gradually mix the wet ingredients into the dry ingredients, stirring gently until just combined. Finally, fold in the chopped fresh peaches.
  3. In a deep saucepan or fryer, pour enough vegetable oil to cover the fritters while frying, about 2-3 inches deep. Preheat the oil to 375°F (190°C) over medium heat.
  4. Carefully drop spoonfuls of the batter into the hot oil, leaving space between each fritter. Fry the fritters for about 2-3 minutes on each side until golden brown.
