  1. Begin by grating 2 medium-sized fresh zucchinis using a box grater. In a bowl, toss the grated zucchini with ½ teaspoon of salt and allow it to sit for 10 minutes.
  2. After resting, take a clean kitchen towel and transfer the salted zucchini into it. Gather the corners of the towel and squeeze firmly to extract as much moisture as possible.
  3. In a large mixing bowl, combine the squeezed zucchini with 2 minced garlic cloves, one beaten egg, ½ cup of grated Parmesan cheese, ½ cup of breadcrumbs, a handful of chopped parsley, 1 teaspoon of dried oregano, and a pinch of black pepper. Mix until well incorporated.
  4. Take about 1 tablespoon of the prepared zucchini mixture and roll it gently in your hands to form a ball.
