Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Grease a mini muffin tin thoroughly with olive oil.
  3. In a large mixing bowl, combine the ricotta cheese, drained spinach, grated Parmesan, egg, minced garlic, and dried oregano.
  4. Using a cookie scoop or two spoons, gently fill each muffin cup about three-quarters full with the spinach and ricotta mixture.
  5. Bake in the preheated oven for 15 to 20 minutes.
  6. Once baked, remove the muffin tin from the oven and let the bites cool in the pan for about 5 minutes.
