  • 1 cup Zucchini Shredded and drained.
  • 1 cup Carrots Shredded and dried.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. If using zucchini or carrots, pat them dry to remove excess moisture.
  3. In a mixing bowl, combine freshly shredded Parmesan cheese with prepared zucchini and/or carrots.
  4. Drop about 2 teaspoons of the cheese mixture onto the prepared baking sheet, spacing them out.
  5. Gently flatten each spoonful to create a disc shape.
  6. Bake for 6-8 minutes, monitoring closely until edges turn golden brown.
  7. Remove from the oven and cool on the tray for 5 minutes before transferring to a paper towel.
  8. Serve immediately or store leftovers in an airtight container.
