Method
 

Preparation Steps
  1. Wash 1 pound of strawberries, hull and cut into quarters. Wash one cucumber, optionally peel and slice into half-moons about ¼ inch thick.
  2. In a large mixing bowl, gently toss together the quartered strawberries and cucumber slices.
  3. Finely chop a handful of fresh mint leaves and sprinkle over the fruit mixture, then gently fold to incorporate.
  4. In a small bowl, whisk 2 tablespoons of honey or agave syrup with the juice of one lime until smooth.
  5. Pour the lime dressing over the fruit and mint mixture, then gently toss to coat.
  6. Transfer the salad to a serving dish and optionally garnish with whole mint leaves. Chill for 15-30 minutes before serving.
