- Wash 1 pound of strawberries, hull and cut into quarters. Wash one cucumber, optionally peel and slice into half-moons about ¼ inch thick.
- In a large mixing bowl, gently toss together the quartered strawberries and cucumber slices.
- Finely chop a handful of fresh mint leaves and sprinkle over the fruit mixture, then gently fold to incorporate.
- In a small bowl, whisk 2 tablespoons of honey or agave syrup with the juice of one lime until smooth.
- Pour the lime dressing over the fruit and mint mixture, then gently toss to coat.
- Transfer the salad to a serving dish and optionally garnish with whole mint leaves. Chill for 15-30 minutes before serving.
